❝ protein-Carbohydrate-fat content as per the raw weight of the item or

❝ after it is cooked?


Hi,
While preparing a menu you have to consider raw weight only and then total raw material (single serving X no of subjects) needs to be cooked. Finally cooked food has to be measured and total quantity should be devided by the total no of subject.
